Pressure Cooker Pot Roast

What You Need:

  • 3 lb chuck roast

  • 1 tbsp avocado oil

  • 1 small yellow onion, roughly chopped

  • 6 cloves garlic, minced

  • 2 cups fingerling potatoes, halved

  • 6-7 carrots, roughly chopped

  • 2 cups bone broth

  • Handful of fresh thyme sprigs and any other roasting herbs (rosemary, sage, etc.)

  • Salt & pepper

What To Do:

  • Generously sprinkle salt on all sides of chuck roast

  • Turn instant pot to sauté mode and heat avocado oil

  • Add garlic and onions to IP, stirring frequently, until golden brown (about 3-4 minutes)

  • Remove garlic and onions from IP and set aside

  • Add chuck roast to IP and quickly sear on all sides (no more than 30 seconds per side)

  • Remove chuck roast from IP and add about half of the potatoes (enough to cover the entire bottom surface area)

  • Return chuck roast to IP, on top of the layer of potatoes. Then, add remaining potatoes plus the carrots, garlic, onions, herbs, and bone broth

  • Add a few pinches of salt, then close the lid and set IP to pressure cook for 2 hours

  • Manually release steam when done, serve & enjoy!
