Creamy Mushroom Herb Chicken
What You Need:
6 bone-in chicken thighs
2 tbsp olive oil
1 tsp truffle infused olive oil
1 can coconut cream
1 lb cremini mushrooms, sliced
6 cloves garlic, thinly sliced
1 lemon, sliced
Large handful of fresh rosemary sprigs
Handful of fresh sage leaves
Sprinkle of dried herbs de provence
Salt & pepper to taste
What To Do:
Heat olive oil in a large skillet on medium-high heat
Add garlic and cook, stirring frequently, until golden brown (about 3-4 minutes)
Remove garlic from skillet and set aside
Add chicken to skillet and cook until skin is golden brown and slightly crisp (about 6 minutes)
Add coconut cream to skillet, stirring to melt and distribute evenly
Return garlic to skillet and add mushrooms, lemon, fresh herbs, seasonings, and top with truffle infused olive oil
Cover and let simmer on low heat for 1 - 1.5 hours, checking for desired tenderness
