Egg in a Nest
What You Need:
2 eggs
5 slices bacon, cut into 1 inch pieces
1/2 yellow onion, roughly chopped
1 red bell pepper, roughly chopped
2/3 cup shaved brussels sprouts
5 cloves garlic, minced
1 squeeze of lemon juice
salt & pepper
What To Do:
Add bacon to large skillet and cook over medium-high heat for about 5 minutes
Add chopped onion to skillet and continue cooking over medium heat for another 2-3 minutes
Add bell pepper to skillet and cook an additional 2-3 minutes
Add brussels sprouts, garlic, and lemon juice to skillet, stirring frequently to incorporate everything
When brussels sprouts are cooked to desired doneness, form two “holes” in the mixture to crack the eggs into
Crack eggs into the cleared area in the skillet and cook on medium-high, covered, until eggs reach desired doneness (mine took about 2 minutes)
Season entire dish with salt & pepper, serve and enjoy!
