Simple Savory Breakfast Casserole
What You Need:
1 lb ground pork
2 cups baby bella mushrooms, sliced
4 cups spinach
4 cloves garlic, minced
1 yellow onion, roughly chopped
1 tbsp avocado oil
Salt and pepper to taste
7 eggs, lightly whisked
What To Do:
Heat avocado oil in large skillet on medium-high heat
Add garlic and onion to skillet once oil is hot and cook, stirring frequently, for 5-6 minutes or until caramelized
Remove garlic and onions from skillet and add pork
Cook pork, stirring frequently, until nearly done
Add mushrooms and spinach and continue cooking until pork is browned and cooked through and spinach and mushrooms have softened
Add salt and pepper to taste
Add pork mixture to a large casserole dish
Pour eggs over everything, making sure to spread evenly
Cover casserole dish with foil or a lid and bake in oven at 400* until eggs are cooked through (about 10-15 minutes)
If you’d like a crispy crust, simply remove the foil or lid for the last half of baking
Serve and enjoy!
I topped mine with some almond cheese and a sprig of fresh dill
