Mexican Cauliflower Rice & Fajitas

What You Need:

For the rice

  • 2 tpsp lard

  • 4 cups cauliflower rice

  • 2 cups chicken broth

  • 3 tpsp onion flakes

  • 4 oz tomato paste

  • Salt to taste

For the fajitas

  • 2 tbsp avocado oil

  • 2 lb chicken breast, cut into strips

  • 3 large bell peppers, cut into strips

  • 1 large yellow onion, halved then thinly sliced into strips

  • 2 tbsp ground cumin

  • 2 tbsp garlic powder

  • 1 tbsp chipotle chile

  • 1 tbsp Mexican oregano

  • Salt to taste

What To Do:

For the rice

  • Heat lard in large skillet

  • Add cauliflower rice and sauté on medium-high heat for 7-8 minutes, stirring frequently

  • Add onion flakes & tomato paste and stir until evenly distributed (sometimes using the back of your spoon can be helpful to spread the tomato paste evenly)

  • Add chicken broth and gently stir to combine

  • Reduce heat and let simmer, covered, for 30 min or until all liquid has absorbed

  • Add salt to taste

For the fajitas

  • Heat avocado oil in large skillet

  • Add chicken and all spices

  • Cook on medium-high until chicken is cooked through (about 10 minutes)

  • Remove chicken from skillet and add peppers and onion

  • Stir to combine and add more of the seasonings as needed

  • Cover and let cook on medium heat fro about 10 minutes

  • Add chicken back to skillet and stir to combine

  • Plate and enjoy!
