Dairy Free Garlic Mashed Potatoes

What You Need:

  • 3 lbs gold yukon potatoes, peeled and quartered

  • 1 yellow onion, finely minced

  • 1 full head of garlic, finely minced

  • 3 tbsp ghee

  • 1 cup coconut cream

  • 1 tbsp salt

  • 1 tsp black pepper

What To Do:

  • Boil potatoes until fork tender

  • Heat 2 tbsp ghee in skillet

  • Add onion, garlic, salt and pepper to skillet and cook on medium heat, stirring frequently, for about 15 minutes or until golden brown

  • In a large bowl mash together cooked potatoes, onion garlic mixture, coconut cream, and remaining ghee

  • Add more ghee or salt as needed to taste

  • Serve and enjoy!
