Dairy Free Garlic Mashed Potatoes
What You Need:
3 lbs gold yukon potatoes, peeled and quartered
1 yellow onion, finely minced
1 full head of garlic, finely minced
3 tbsp ghee
1 cup coconut cream
1 tbsp salt
1 tsp black pepper
What To Do:
Boil potatoes until fork tender
Heat 2 tbsp ghee in skillet
Add onion, garlic, salt and pepper to skillet and cook on medium heat, stirring frequently, for about 15 minutes or until golden brown
In a large bowl mash together cooked potatoes, onion garlic mixture, coconut cream, and remaining ghee
Add more ghee or salt as needed to taste
Serve and enjoy!
