Mango Shrimp

What You Need:

  • 2 lbs shrimp, peeled & deveined

  • 2 cups fresh mango, diced

  • 10 cloves garlic, roughly chopped

  • 1 yellow onion, roughly chopped

  • 2 tbsp ghee

  • 2 tbsp avocado oil

  • 1/4 cup Adobo seasoning

  • Salt & pepper

What To Do:

  • Rinse shrimp and pat dry. Then add shrimp to a large bag and pour in avocado oil and adobo seasoning. Shake/massage bag to make sure all shrimp is generously coated. Leave bag on counter to allow shrimp to come up to room temperature before cooking

  • Heat ghee in a large skillet and add garlic and onion

  • Sauté on medium heat for about 4-5 minutes, or until slight caramelization of garlic & onions begins

  • Add mango to skillet and cook an additional 5 minutes, stirring frequently

  • Remove mango mixture from skillet and increase heat to medium-high, adding a bit more ghee if needed

  • Add shrimp in a single layer into the skillet and let cook on one side for about 3 minutes

  • Flip shrimps and add the mango mixture back into the skillet

  • Keep a close eye on the shrimp, as they’ll cook quickly and you don’t want to overcook them. When they are no longer translucent and instead start to turn a bright pink color, that’s when you know they’re done

  • Salt & pepper to taste. Plate and enjoy!
