Mango Shrimp
What You Need:
2 lbs shrimp, peeled & deveined
2 cups fresh mango, diced
10 cloves garlic, roughly chopped
1 yellow onion, roughly chopped
2 tbsp ghee
2 tbsp avocado oil
1/4 cup Adobo seasoning
Salt & pepper
What To Do:
Rinse shrimp and pat dry. Then add shrimp to a large bag and pour in avocado oil and adobo seasoning. Shake/massage bag to make sure all shrimp is generously coated. Leave bag on counter to allow shrimp to come up to room temperature before cooking
Heat ghee in a large skillet and add garlic and onion
Sauté on medium heat for about 4-5 minutes, or until slight caramelization of garlic & onions begins
Add mango to skillet and cook an additional 5 minutes, stirring frequently
Remove mango mixture from skillet and increase heat to medium-high, adding a bit more ghee if needed
Add shrimp in a single layer into the skillet and let cook on one side for about 3 minutes
Flip shrimps and add the mango mixture back into the skillet
Keep a close eye on the shrimp, as they’ll cook quickly and you don’t want to overcook them. When they are no longer translucent and instead start to turn a bright pink color, that’s when you know they’re done
Salt & pepper to taste. Plate and enjoy!
