Pineapple Pork Chops

What You Need:

  • 6 boneless pork chops

  • 1 can sliced pineapple

  • 2 bell peppers, diced

  • 1 yellow onion, roughly chopped

  • 10 cloves garlic, minced

  • 2 tbsp avocado oil

  • Garlic powder

  • Powdered ginger

  • Salt

What To Do:

  • Place pork chops on a plate and generously coat both sides with equal parts ginger and garlic powder with a sprinkle of salt

  • Let chops sit out while you start to cook the onions and garlic

  • Heat oil in a large skillet and add garlic and onion

  • Sauté on medium heat for about 3 minutes

  • Add bell pepper and pineapple to skillet and continue cooking for about 6-7 minutes or until peppers start to get a bit tender

  • Remove pepper pineapple mixture from skillet and increase heat to high, adding a bit more oil if needed

  • Add pork chops and let cook on one side for about 3ish minutes or until that side is browned

  • Flip chops, reduce heat to low, add back in the pepper pineapple mixture, and cover with lid

  • Cook covered on low until chops reach an internal temperature of 145*

  • Plate and enjoy!
