Pineapple Pork Chops
What You Need:
6 boneless pork chops
1 can sliced pineapple
2 bell peppers, diced
1 yellow onion, roughly chopped
10 cloves garlic, minced
2 tbsp avocado oil
Garlic powder
Powdered ginger
Salt
What To Do:
Place pork chops on a plate and generously coat both sides with equal parts ginger and garlic powder with a sprinkle of salt
Let chops sit out while you start to cook the onions and garlic
Heat oil in a large skillet and add garlic and onion
Sauté on medium heat for about 3 minutes
Add bell pepper and pineapple to skillet and continue cooking for about 6-7 minutes or until peppers start to get a bit tender
Remove pepper pineapple mixture from skillet and increase heat to high, adding a bit more oil if needed
Add pork chops and let cook on one side for about 3ish minutes or until that side is browned
Flip chops, reduce heat to low, add back in the pepper pineapple mixture, and cover with lid
Cook covered on low until chops reach an internal temperature of 145*
Plate and enjoy!
