Pineapple Jalapeño Tacos
What You Need:
1 lb ground beef
1 jalapeño, diced
1 green bell pepper, roughly chopped
2 small tomatoes, roughly chopped
1 small red onion, roughly chopped
3 cloves garlic, roughly chopped
1.5 cups pineapple, diced
1 handful fresh basil, roughly chopped
1 tsp cumin
1 tblspn lime juice
Siete Foods, coconut cassava tortillas
Avocado, radish, cilantro, and hot sauce for garnish
What To Do:
Add beef, 1/2 the diced jalapeño, all the bell pepper, all the tomato, all the onion, 1/2 the chopped basil, and all the pineapple to a large skillet
Cook on medium-high heat, stirring frequently until meat is nearly cooked (approx. 10-12 min)
Add remaining jalapeño and basil, as well as the chopped garlic, cumin, and lime juice
Reduce heat to medium-low and continue cooking until all ingredients are fully incorporated (approx. 5-7 min)
When taco meat mixture is done, you’re ready to assemble your tacos!
Add desired amount of taco meat to heated tortilla (I warm mine up directly on the stovetop)
Stuff your taco with sliced avocado, thinly sliced watermelon radish, a few small pieces of diced pineapple, fresh cilantro, a leaf or two of fresh basil, and some hot sauce (I used Siete Foods chipotle hot sauce) .
