Garlic Herb Beef Tenderloin

What You Need:

  • 4-5 lb beef tenderloin

  • 1/4 cup each of fresh rosemary, thyme, and sage, finely chopped

  • 8-10 cloves of garlic, minced

  • 4 tbsp butter (or ghee for Whole30)

  • 1-2 tbsp olive oil

  • 2 tbsp kosher salt

  • 1 tbsp freshly ground black pepper

What To Do:

  • In bowl add 4 tbsp softened butter and 1-2 tbsp of olive oil

  • Add herbs, garlic, salt, pepper then mix to form a paste

  • Rub paste thoroughly on to all sides of the tenderloin and set aside

  • Cook at 250 indirect heat until internal temperature reaches 130. Remove from grill/oven and set aside.

  • Raise temperature to 500 degrees and add tenderloin to direct heat/smoking hot skillet and sear on all sides until browned or roughly 1 minute a side. This should finish medium to medium-rare

  • Let rest for 15 minutes, covered in foil. Then, serve and enjoy!
