Swiss Chard Breakfast Hash


What You Need:

  • 5 peices of bacon

  • 1/2 large sweet potato

  • 1/4 yellow onion

  • Large bunch of Swiss chard

What To Do:

  • Cut the bacon into small pieces (1-2 inches in length)

  • Roughly chop the onion

  • Add bacon & onion to large skillet and cook over medium/high heat

  • Cook the sweet potato in the microwave for about 2-3 minutes. Enough to soften it up, but doesn’t have to be completely done since we’ll cook it more in the skillet

  • While the sweet potato is cooking, roughly chop the Swiss chard. I cut mine so that the stem was cut into 2-3 inch length pieces

  • Add the chard to the skillet and combine with bacon & onion

  • When the sweet potato is done, cut it into small cubes (1-2 inches)

  • Add sweet potato to the skillet and mix in with all ingredients

  • Cook for an additional minute or two (long enough for sweet potatoes to crisp up slightly)

  • If you’d like to add an egg on the side, simply push the chard mixture to the edges of the skillet and crack an egg in the center. (I’m all about one pan meals! The less cleanup the better!)

  • Plate and enjoy!!
